United States: Cutting Vedge launches a 100% vegan range made with artichokes

Chickpeas, mushrooms, lupine, algae… The plant industry already relies on many ingredients to develop alternatives to products of animal origin. But it seems that one vegetable has escaped his radar: the artichoke. The new American brand Cutting Vedge has decided to focus on this food to develop a range of 100% vegan products.

Based in New Jersey, the brand chose artichoke for its high fiber, micronutrient and antioxidant content. This vegetable is also a cholesterol-free protein source. Cutting Vedge partners with chefs to offer burgers, sausages, meatballs and artichoke-based crumbs served with a blend of quinoa spinach and bean protein. The range is completely vegan, kosher and non-GMO. It will launch in the United States from February 1.
