United States: Cutting Vedge launches a 100% vegan range made with artichokes

Chickpeas, mushrooms, lupine, algaeā€¦ The plant industry already relies on many ingredients to develop alternatives to products of animal origin. But it seems that one vegetable has escaped his radar: the artichoke. The new American brand Cutting Vedge has decided to focus on this food to develop a range of 100% vegan products.

Based in New Jersey, the brand chose artichoke for its high fiber, micronutrient and antioxidant content. This vegetable is also a cholesterol-free protein source. Cutting Vedge partners with chefs to offer burgers, sausages, meatballs and artichoke-based crumbs served with a blend of quinoa spinach and bean protein. The range is completely vegan, kosher and non-GMO. It will launch in the United States from February 1.
