If I took a platter of these to a gathering with my friends, I guarantee they’d be one of the first things to go. Everybody I know loves these. Even the hardest of hard-core carnivores munch these down as enthusiastically as they would a rack of ribs.

Serving idea: DIY spread!

Lay out all the ingredients with a large bowl of water for dipping the rice paper in, then make everyone make their own. This DIY approach is a menu item on Vietnamese restaurants here in Sydney which is very popular, I always order it!

Peanut Dipping Sauce for Rice Paper Rolls

This peanut sauce is everything!! This is a Vietnamese Peanut Dipping Sauce. The 2 key ingredients are peanut butter and hoisin sauce which is thinned out with either milk or water (I prefer milk for colour. With water, the sauce is darker).

Substitute for Bread

One of the easiest ways to lose weight with rice paper wrappers is to use them as bread substitutes. A serving of one 8 1/2-inch wrapper has 31.3 calories.

Fill With Veggies Instead

Traditionally, rice paper wrappers are filled with cooked rice or rice noodles, which help to make the meal more substantial. Instead of using rice noodles, which are higher in calories despite being low-fat, consider filling your wrapper with vegetables, such as leaf lettuce and sliced peppers.

Healthy Proteins

Traditional Vietnamese summer rolls use a mix of pork, shrimp or cooked beef. When making your own, you can choose healthier low-calorie options, such as shrimp, in place of higher-fat ones, such as beef.

Using Rice Paper Wrappers

Take a tip from Vietnamese summer rolls and include fresh herbs in your roll to boost flavor while keeping your rolls low in fat and salt. Rice paper wrappers need to be dipped in hot water to soften before they can be used, but then the paper can be used and rolled up just like a tortilla for a burrito.

Instructions

1 Place noodles in a large heatproof bowl and cover with boiling water. Set aside to soak for 2 minutes or until softened.

Variations

Wasabi chicken: Omit capsicum from recipe. Place 250g 9oz skinless chicken breast fillet in a frying pan. Cover with cold water and bring to a simmer over medium heat. Poach, uncovered, for 10-12 minutes or until cooked through. Transfer chicken to a plate and set aside for 10 minutes to cool. Shred.
