1. Introduction
The microbiological safety of organically grown fruits and vegetables is of concern because of the association between food-borne disease and the consumption of fresh produce ( Harris et al., 2003, Fröder et al., 2007 ).
2. Materials and methods
G. duodenalis cysts were purified from human feces using the 1 M sucrose flotation method ( Rubin et al., 1989 ). Cysts were suspended in distilled water, and their number was determined by counting in Neubauer chamber. The cysts concentration was adjusted to 1.0 × 10 6 cysts/ml, and suspensions were maintained at 4 °C for a maximum of one week.
3. Results and discussion
Undiluted vinegar completely inactivated cysts after 60 min at 21 °C, but some cysts survived after the other treatments with diluted vinegar at 21 °C ( Table 1 ), with the viability increasing with increasing dilution of vinegar used and with the decreasing of the treatment times.

The results of surveys for Giardia duodenalis contamination of food stuffs provide a “snapshot” of what is found on a particular sample, under particular conditions, using a particular method, in a particular laboratory, by a particular analyst. Even method standardisation does not mean that results from different labs or surveys are entirely comparable, and data acquisition is also hampered by the relatively small sample size that can be analysed. Nevertheless, the results from such surveys provide data that are important as a scientific handle and can be used for risk assessment and risk management, as well as identifying potential high-risk vehicles and providing background information. In this chapter the results from surveys conducted on fresh produce (fruits and vegetables), shellfish, meat, beverages and water used in the food industry are considered separately, and for fresh produce and shellfish, the results of different surveys are summarised in a table format. In general, widespread, low-level contamination has been documented. Although such surveys can provide information on the number of samples that are contaminated and the extent of contamination (how many cysts per gram of food matrix), the viability of the Giardia cysts is not usually determined, nor their infectivity. Water used in the food industry that has been analysed for contamination with Giardia cysts includes irrigation water and wash water. For some steps in the food industry, water used is of potable quality, but for other processes this may not be the case. For example, wastewater may be used for irrigation, particularly in areas where water resources are scarce, and is an obvious potential source of contamination of crops.

Vinegar concentration of 5% exhibited the highest mean of non-viable cysts along the time intervals, while the lowest was shown with 0.04% where also, no viable cysts were detected at 60 min. All tested concentrations behaved in a time-dependent manner. There was a positive correlation with a significant outcome between the different concentrations and the mean of the non-viable parasites along time. Transmission electron microscopy of treated cysts revealed corrugated altered cell wall with loss of ridges and detachment and shrinkage of content. Treated trophozoites showed flattening of the acanthopodia with thinned out plasma membrane and degenerated cytoplasmic content. The study highlighted the potential use of vinegar as an adjuvant in the prevention and treatment of AK.
