Dr and Mrs, it's what he prefers and is correct. If he wants Dr and Mrs, use that. It's his title, his choice. If he wants to be referred to as "Dr." then that answers your question.

Hi, I agree with Maureen & JerseyKitten as well. I'm working on my doctorate in nursing so I can empathize with how much your degree means to you, but having said that I don't think it's really appropriate to introduce yourself as Mr & Dr at your wedding. To me it sounds awkward & too formal for your introduction as a newly married couple.
