Method 2: Determine cake size using apps

Since we aren’t all math geniuses, we need all the help we can get! And help comes in the form of some very useful smartphone apps. There are some very clever ones on the market (and by the way, they all use the basic formula above in their calculations!). My favourite app is called Tiered Caker.

Cake Serving Size

Cake serving size can vary depending on the shape of your cake and who’s in charge of cutting! For the purposes of this chart, party serving amounts are based on cake slices that measure about 1½ x 2 inches in size. Wedding servings are based on slices that measure about 1 x 2 inches in size.

Bake Time and Temperature

When baking your cake, always follow the rules on your recipe for oven temperature and bake time. The numbers provided here are a general guide but may not be suitable for all recipes.

Taller or Shorter Cakes

Cakes that measure 3 to 6 inches high, baked in the same size pan, would yield the same number of servings because they follow the same pattern of cutting. For example, a 6 in. round cake that measured 6 inches high would yield the same amount as a 6 in. round cake that measured 3 inches high, since they’re both cut the same way.

Buttercream Amounts

Buttercream amounts are very general and will vary with consistency, thickness applied and the decorating tips used. The amounts listed in this chart account for a buttercream coat and a simple bottom and top border. If you plan on adding more detail, you may need more buttercream than what’s listed here.

3 In. High Cakes (Using 3 in. High Pans)

For any pans 3 in. deep and 12 in. diameter or larger, we recommend using a heating core to ensure even baking. Use two cores for 18 in. pans.

Cake Size, Shape, and Type

Round, square, and heart-shaped cakes each produce different numbers of portions. A square cake will yield more portions than a round or heart-shaped cake. Unusual shapes—octagonal or hexagonal cakes, for example—yield a similar number of portions as their square counterparts.

Portions for Sheet Cakes

When you choose a sponge cake, you can use the size of the cake to determine the average number of pieces to expect from a single layer. The chart offers an approximate portion based on slices that are cut 2 inches long by 1 inch wide.

Tiered Wedding Cakes

Most ceremonial wedding cakes are made with two or more layers of cake, with icing between each layer. Slices are typically 4 inches high and 2 inches long by 1 inch wide. When estimating the size of a wedding cake, assume the serving size will be at least that big and then figure out how many are needed for the guest count.

Portions for Tiered Cakes

Using those cutting methods, you can estimate how many pieces of cake your tiered creation will produce. The chart can help you determine what size to make your cake based on the number and size of your tiers. When planning a tiered cake design , make sure your smallest base size is a minimum of 10 inches.

Opt for Cupcakes

Sometimes, no matter how carefully you plan, you end up with either too few slices or too much cake. To be perfectly accurate with portions for an event, a good backup plan is to serve cupcakes instead of cake. Cupcakes can be configured into an elegant configuration on stands and you can bake only the number of cupcakes you need for each guest.

Rectangular Cake

The most common size for homemade cake recipes is a large rectangle. It's baked in a standard 9-by-13-inch cake pan. This is a perfect size for parties, and you can expect to get between 12 and 20 slices from a single cake.

Square and Round Cakes

Square and round baking pans make smaller cakes and come in either 8-inch or 9-inch sizes. This is a good choice for family dinners and small parties.

Angel Food and Bundt Cake

These cakes are baked in special round cake pans with a hollow center. The standard angel food cake pan is 10 inches in diameter and fits the average cake stand. Bundt cake pans vary in size, and are often measured in cups: A 10-inch, 12-cup pan is the standard size. For both types of cake, expect to get 12 to 16 slices.

Cheesecake

Cheesecakes are thin and baked in either 9- or 10-inch pie plates. The standard serving size cuts cheesecake into 12 even slices. You can cut them a little thinner and get up to 16 slices out of one cheesecake.
