The study clearly demonstrated the fig does not get sweeter in a few days after being picked but can change texture (get soft) they compared this with other fruit such as tomato and banana that do increase brix post harvest. I would presume however if the fig were held a long while and actually sustained some DRYING ( would take more than few days to even begin) the sugar concentration WOULD increase, but due to DRYING not RIPENING. I picked a few here left on counter3 days and werent sweeter than others eaten right off tree (my favorite way to eat them) The study also showed that post harvest chemical treatments that make some other picked fruits sweeter had no such effect on figs. Sad truth!
