Funny, this topic came up in a conversation I had not so long ago. I had always beleived them to be tripe, but a bit of searching came up stating otherwise (at least in the majority). Google for Surimi.

Don't be alarmed. That "white stuff" that oozes out your salmon is perfectly natural and nothing to be ashamed of. It is called albumin. It's a protein. Like egg white. When you cook salmon above 60C the muscle fibres contract forcing out the albumin that coagulates.

Zeroing is the act of placing the empty container on the scales then resetting the scales to zero. According to the National Measurement Institute (it's like the Pond's Institute only real) you need to get what you pay for.

History
Fish pastes have been a popular food in East Asia. In China, the food was used to make fish balls (魚蛋/魚丸) and ingredients in a thick soup known as " Geng " (羹) common in Fujian cuisine. In Japan, the earliest surimi production was in 1115 for making kamaboko.
Production
Lean meat from fish or land animals is first separated or minced. The meat then is rinsed numerous times to eliminate undesirable odors. The result is beaten and pulverized to form a gelatinous paste.
