Style

The beginning of a new year often has us all feeling like starting off fresh by taking on better habits, getting rid of old ones, and—most commonly—changing up our look.

Home

There's no denying how the pandemic fundamentally changed the world—including how we live (and work) inside our homes. An overall trend toward celebrating the history and originality of our homes is displacing ultramodern aesthetics and sharp lines as we all look to create cozier, colorful, more personalized spaces that better suit our lifestyles.

Even though they don’t show it, string beans contain the same pigments that give vegetables their red, yellow and orange colors. These pigments, called carotenoids, all function as antioxidants, but some also fill other roles. String beans contain three carotenoids: beta-carotene, lutein and zeaxanthin.

Vitamin K for Strong Bones

Without vitamin K, you could consume plenty of calcium and still have weak bones. Your body needs vitamin K to produce the proteins that help your bones take in calcium. It also regulates bone metabolism, which prevents the loss of minerals. These combined roles make vitamin K essential for maintaining bone density.

C is for Collagen

As an antioxidant, vitamin C neutralizes free radicals before they can damage healthy cells. In addition to guarding cells, vitamin C also protects proteins, fats, carbohydrates and DNA from free radicals. But you can thank vitamin C for more than antioxidant protection. Without an adequate supply of vitamin C, your body can’t make collagen.

Vitamin C

Vitamin A

One cup of raw green beans provides 690 IU of Vitamin A, a little less than 15 percent of the daily recommended value. Vitamin A isn’t a single vitamin. It’s a group of compounds known as retinoids. Vitamin A is important to immune health, reproduction, and healthy vision.

Minerals

Green beans are a good source of minerals, especially manganese. This essential mineral supports your metabolism and has antioxidant abilities. It also supports bone health and promotes wound healing.

Steam and Saute

Perhaps the easiest way to cook green beans is to prepare them on the stovetop. This one-pan method is quick and results in a dreamy caramelized dish.

Blanch and Shock

This method is a great way to preserve green beans’ freshness-especially if you’re preparing them in advance for a party or using them in a salad for lunch. The blanch-and-chill technique partially cooks the green beans so that they still taste snappy, but they’re not raw.

Roast

For this technique, we’ll bake the green beans in the oven at a high temperature. This crisps the beans up, creating an amazing depth of flavor (with almost no effort on our part!) Opt for roasting when you already have a dish-say, chicken, roasting in the oven.
