Having done some research, you cannot use a two-handed weapon with one hand, even if it's a double weapon. This question on the Pathfinder FAQ states definitively that you can't use a two-handed weapon in one hand, effectively or not. However, the rules for double weapons apply to exceptions that allow you to use a two-handed weapon with one hand.

Two-handed weapons may not be used one-handed. Using a one-handed weapon in your off hand results in a −2 penalty to all of your attacks (in addition to other off-hand penalties that may apply). Special: The effect of this feat does not stack with other feats that alter wielding effort or weapon size.

Looking at the Magic Items page on D20pfsrd, you can only have as many as 15 magic items at the same time. 14 slots from head to toe, and then a 15th "slot" for slotless. I've always thought, from looking online, that you can have and use as many slotless magic items as you can afford/find.
