Pieology was first opened in Fullerton, California, in March 2011 by Carl Chang and James Markham. They targeted university towns and developed their concept by making their pizzeria attractive to a younger crowd. It worked and saw the company expand throughout California before taking their restaurants across state lines.

The experience is similar to the one you get at Chipotle. You build your pizza by selecting your favorite ingredients while moving down the service line. Once you reach the end of the line, your pizza is ready to be baked and placed in a high open-flame oven. On the walls, you’ll find inspirational quotes that are exclusive to each location.
