Introduction

Mauve icing is a type of food coloring that can make many different types of pastries. The color it produces is often called “mauve” due to its similarity to the flower.

Take one c. white sugar, 1/4 c. cocoa, and two tbs water. Mix them in a pan over heat on the stove at medium heat.

Stir continually until you have a thick liquid but can still pour off your spoon quickly when held vertically above the pan (it should look like chocolate syrup). If this has not happened after 10 minutes of cooking, it probably won’t happen for you – take it off the heat and set it aside to cool down, then move on to step three!

Once your liquid is cooled down enough so that its texture doesn’t burn you (test by touching with your finger), mix in 1 tsp vanilla extract and three drops of red food coloring. Stir continually until the liquid begins to have a buttermilk-like texture.

Step 4

Keep adding food coloring, one drop at a time, until your desired color is reached! You don’t need much food coloring because this icing can get very dark very quickly, so be careful not to overdo it!

Step 5

If you want light pink icing similar to boxed cupcakes, take two tbs of the liquid from step three and mix with one c. white sugar in your mixing bowl. Then add two tbs water and stir well until its texture becomes creamy (if it gets too thin, just add another tablespoon or two of sugar).

Step 6

Beat in 1/4 c cocoa powder until well mixed, 3 minutes on high speed. Voila! This is mauve icing – try experimenting with different amounts of sugar, water, and food coloring for different shades of mauve icing!
