You have a shower now, yes? Is it comfortable? Most place a shower head at about 72 inches. Always pull the resrictor out of the head, hate to say that, but DO IT. Stand in there is my advice, and put your hand out for a placement of handheld. Kids grow too fast to even worry on that, and once placed? You;re done. They'll be fine under a hand held.
