The easiest method I've used is to spread a thick coat of ketchup on the pan with a pastry or basting brush and let sit. It may only take 10 minutes, or much longer (up to an hour), depending on how discolored the copper is. Rinse the ketchup off. That will give your hands a much needed break. :-)
